Two week menu example

(I'll update these from time to time so be sure to check back)

Monday – Chopped salad with Deli turkey, cheese, and hardboiled eggs. Some of the bagged salads are pretty good for this dinner and then I add additional vegetables. Since you’ve got the knife out anyways, chop extra peppers, zucchini, tomatoes, onions, and celery. Store the extras in the refrigerator for later in the week.

Tuesday – Something out of the freezer ready to go in the crock-pot (see Investment Cooking)

Wednesday – Chicken (or Salmon) on the grill with a side of Pasta Salad. (Cheese filled tortellini, Italian dressing and the veggies from Monday) Set aside 2 cups of pasta salad for later in the week.

Thursday – Teen special (something that one of my teenagers can make like Chili-Mac, Hot Dogs, Hamburgers, Nachos) The only rule is that they have to include something green like a salad, green beans or broccoli. (Despite my daughter’s persuasive arguments – pickles do not count)

Friday – Minestrone- In a skillet, brown one pound of sausage, ground turkey, or hamburger. In crock-pot mix 2 cans of chicken broth, 1 can of Italian stewed tomatoes, the remaining pasta salad from Wednesday, a can of kidney beans, and Italian seasoning to taste. Add browned meat and heat on low for 4-6 hours. Serve sprinkled with cheese and French bread.

Saturday-Tacos and Tostados (Reserve about 2 cups of taco meat and a cup of refried beans in the freezer to make chili at a later date)

Sunday – Baked Chicken dinner (bake two whole chickens or enough breasts and thighs to equal the same amount of meat) Save half the meat for later in the week.

Monday- Pancake Dinner – add fried eggs and bacon. Fry an extra pound of bacon for Thursday night. If you have extra pancakes, bag them up and freeze for easy microwave breakfast.

Tuesday – Something out of the freezer again! (see Investment cooking)

Wednesday – Chicken and Noodles. In crock-pot use remaining chicken from Monday, two cans of chicken broth, three cups of water, one chopped onion, and two stalks of chopped celery. Cook on low for several hours (at least until veggies are tender). Remove two cups of broth from crock-pot and set aside in a small saucepan. To the crock-pot add one box of frozen mixed vegetables (you can use canned too) and one small can of mushrooms. In the saucepan, whisk in two packages of instant chicken gravy. Return gravy mix to crock-pot. Add 3 cups of egg noodles, turn up to high, and cook until noodles are tender. About 30 minutes . (Hint – if mixture is too thin, add small amounts of instant potatoes until you get the consistency you want)

Thursday – Teens cook Bacon, Lettuce, Tomato sandwiches and canned soup. Warm Monday’s bacon gently in the microwave (only about 30 seconds)

Friday – Stuffed Baked Potatoes. Rub Potatoes with olive oil and cook in crock-pot for the day on low. Top with chili, broccoli, cheese or even some of the chicken mixture from Wednesday (if there is any left over!)

Saturday –"Pay Day Pizza" or Date night with your Honey!
